Bycatch + Rosé Dinner at Clementine
Bycatch is the portion of a commercial fishing catch that consists of marine life caught unintentionally, resulting in an exciting opportunity for culinary creativity! As a restaurant with a continued mission to prevent food waste, Clementine couldn’t be more thrilled to host this special dinner.
Because the fish is caught daily and a variety of fish will be delivered, Chef Russ must plan the official menu on the day of the dinner. Guests can expect to see dishes featuring items such as sea urchins, welks, razor clams and more. A framework of the evening’s menu can be found below.
Courses will be accompanied by rosé pairings hand-selected by wine aficionado Patrick Frasier and will be a fresh (not to mention delicious) welcome to spring.
