Glass and Plate Restaurant Now Open in Olmos Park

Chef Justin Ward, formerly with the CIA of San Antonio, operates
new full-service eatery and bar

SAN ANTONIO – Chef Justin Ward and his wife, Cristina Ward, have opened their new culinary venture, Glass and Plate Restaurant in a 6,000-square-foot space at 4212 McCullough Ave. in Olmos Park.

Glass and Plate (G&P) Restaurant serves American cuisine with European influences with lunch, dinner and weekend brunch along with a full bar amid a casual and relaxed atmosphere.

“We hope to become a staple of Olmos Park as well as the surrounding neighborhoods,” Chef Ward said. “I see Glass and Plate Restaurant as standing the test of time because it will grow roots in the community, and it’s exactly the type of place I would want in my neighborhood.”

In addition to soups and salads, lunch will include pasta dishes, specialty sandwiches and signatures including Braised Chicken Thighs with Romanian-style Ratatouille, Italian Sausage with Slow Cooked Cabbage and Polenta, and Grilled Salmon with Tortilla Slaw and Chimichurri.

Dinner will feature appetizers, such as Peppercorn Cured Salmon Bruschetta, Littleneck Clams with Parmesano Reggiano with parsley and white wine, Pork Meat Balls with Pepper Ragout and Bandera Quail with Mango-Habenero Agave. Entrees include Crisped Pork Ribs, Braised Chuck Pot Roast, Pork Shoulder Steak, Spatchcock Cornish Hen, and Pan Seared Scallops, among others. Brunch includes Texas Chile Omelet, Steak and Eggs, Creole Spiced Salmon cakes and their specialty G&P Poutine: a sweet onion stuffed potato wedge with bacon gravy and fresh mozzarella.

Features of the bar include the full menu so that guests can be served at the oversized granite counters along with signature cocktails and a great beer and wine selection.

Prior to Glass and Plate Restaurant, Chef Ward was most recently a professor at the Culinary Institute of America (CIA) at both the San Antonio and New York campuses. He spent two semesters in Southern Italy as the instructor for the CIA’s Italian Concentration Program. Chef Ward is a CIA graduate and holds a bachelor’s degree in hospitality management from The International Culinary School at the Art Institute of Atlanta. Chef Ward was the owner of two successful restaurants in Atlanta and has more than 30 years of experience in the hospitality and education industries.

Chef Ward has used the Culinary Institute of America as a valuable resource to staff his restaurant with current and former students.

Cristina, who will oversee the front of the house, has extensive experience in the food service industry, having worked as a server at upscale restaurants in Italy and in her native Romania. She also has an advanced gelato course certificate and a commercial operator and administration food and beverage certificate.

She has had a hand in creating many of the recipes behind the signature dishes, borrowing heavily from the flavors of her European background and of the warm memories of her grandmother’s farm in Romania with its fresh vegetables, spices and home-grown, natural wheats and grains used for cooking and baking.

“Our menus will offer the type of food that we eat and never get tired of. We sell what we eat and eat what we sell,” Cristina said.

Incidentally, the couple met in 2017 in Italy, when Chef Ward was with a group of CIA students as part of the culinary school’s study abroad program. He was dining at a restaurant where she worked. Their hope is that their guests will feel like a part of the Glass and Plate family as they enjoy themselves in the comfortable and casual atmosphere.
