If you love traditional Mexican cuisine but also want to appreciate its modern interpretations, then you will love what Chef Rick Bayless is cooking. Bayless is best known for his PBS series Mexico: One Plate at a Time, which highlights a signature Mexican dish in each episode, such as Enchiladas or Ceviche, while exploring Mexican stalls, markets, and home kitchens.

Rick Bayless has received a Michelin star, holds the title of Top Chef Masters, and is a seven times James Beard Awards winner.

You cannot have a Texas Food + Wine event without iconic barbeque. Chef Esaul Ramos is the pit master and co-owner of 2M Smoke House. He is passionate about culture and food, emphasizing bringing new flavors and experiences to the barbeque world. You can find unique staples at his 2M Smokehouse, such as chicharoni macaroni and pickled nopales. You can also find an array of good barbeque, including family packs of pounds of meats.

After decades of world travel, Finn Walter opened his restaurant, The Nicolett, in Lubbock, Texas. Named after the first hotel in the area, Walter’s restaurant features high plains dishes that draw inspiration from Finn Walter’s experiences traveling across Texas from Santa Fe, Napa Valley, Austin, and more. Dishes such as West Texas crudites, or poussin baked in masa, represent the flavors found only in North Texas.

Finn Walter is a 2022 James Beard Award Semifinalist for Best Chef: Texas.
