Succulent Salmon Salpicon
Serves 2
Ingredients
8-ounce salmon filet, seasoned with salt and pepper
Directions
Sear salmon in a hot, oiled pan for at least a minute or two on each side. Place in a 350 degree oven for 7-10 minutes.
Magi Marinade
3 ounces Magi sauce
2 fresh limes, juiced
1 tomatillo, finely diced
½ red onion, finely julienned
1 Serrano pepper, chopped, with seeds
Handful of chopped cilantro
Directions
Mix all ingredients for marinade and toss with salmon, breaking it up slightly.
Serve with garlic croutons.
